Garlicky Cashew Dip + Meatless Chik’n Nuggets!

I’m always looking for options to spice things up in my kitchen, while always trying to eat without meat. While I’m not vegan (I’m vegetarian) I find myself gravitating soooo much towards fully vegan recipes + I’m trying out to see how my body feels eating less cheese (pray for me please! Lol).
I wanted to make a dip that felt decadent and savory but didn’t have any cheese in it, and I manage to pull it off! I used cashews instead of cheese, and of course, turmeric because I never need an excuse to add turmeric to my recipes and you guys know that 🙂

Garlicky Cashew Dip
I used RAW cashews and soaked them overnight so they were soft to blend and make the dip.
The next day, I mixed it with the garlic and spices and blend it until smooth!
Here’s the complete recipe:
Ingredients
- 1 cup raw cashews
- 1/2 tablespoon garlic
- 1/2 tablespoon turmeric
- 1/2 tablespoon pink himalayan salt
- 1/2 tablespoon black pepper
- 1 tablespoon nutritional yeast
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice (more to taste)
- 1/4 cup water (to blend the cashews)
- 2 cups water (to soak the cashews overnight)
Instructions
- Place all the ingredients in a blender
- Blend very well until smooth
- Add more water if needed, and until it reaches the consistency of your liking
- Serve, and enjoy!
