I’m pretty much an avocado girl through, and through… BUT, during this social distancing phase (and in general), I’ve been challenging myself to be more creative in the kitchen and use up everything I have in my pantry before I re-stock.
So when I ran out of avocados I decided to have a chickpea mash toast instead, using Arnold 12 Grain Bread (which may be Oroweat Bread or Brownberry Bread depending on where you live, but it’s all the same great taste from the same company!). Chickpea mash? Isn’t that… hummus? Nope!
I deliberately left good chunks of the chickpeas, so the mixture had more texture and felt more filling instead of the regular super smooth hummus consistency.
- 2 slices of Arnold 12 Grains Bread
- 1 cup cooked chickpeas
- 1 teaspoon turmeric
- 1 teaspoon garlic powder
- 1/2 tablespoon apple cider vinegar (or lemon juice if you prefer)
- 1 tablespoon olive oil
- Salt & pepper to taste
- Tomatoes (optional)
- Mix all the ingredients well, and mash with a fork
- You do not need to mash completely, and make sure to leave some chunks of the chickpeas for more texture
- Add the chickpea mash to top the Arnold 12 Grains Bread
- Add the tomatoes
- Sprinkle some more olive oil, and pepper to taste
