Avocado Mango Toast

Few things make my belly as happy as a good avocado toast. Make it an avocado-mango toast, and you’ll have my heart!

I am particularly obsessed with avocado because I grew up eating them all the time. What better “excuse” to integrate them in every recipe I can, than the fact that avocados are a staple of my family’s and culture’s cuisine. So every time I use them, I feel like I’m honoring my heritage, especially this month when we celebrate Hispanic Heritage Month!



  • 1/2 Avocado From Mexico (sliced, make sure it is ripe)
  • 1/2 mango
  • Sprouted greens (kale, alfalfa, whichever you prefer)
  • Sprouted grains bread
  • 1 teaspoon lime juice
  • Salt & pepper to taste
  • Olive oil for drizzling (optional)


  1. Slice your avocado & mango in thin, diagonal slices
  2. Place them on top of the bread (toast it first for a few minutes, so it's crunchy!)
  3. Drizzle with the lime juice
  4. Sprinkle salt & pepper to taste
  5. You can also drizzle a little bit of olive oil to taste
  6. Add the sprouts on top
  7. Enjoy!
